¾ cup of unsalted butter, melted and slightly cooled
1 and ¼ of packed light or dark brown sugar
1 large egg, room temperature
2 teaspoons of pure vanilla extract
⅓ cup of granulated sugar, for rolling
Instructions
Heat oven to 325 ℉.
Toss together the flour, baking soda, cornstarch, cinnamon, and salt in a large bowl then set aside.
In a medium size bowl, whisk the melted butter and brown sugar together until no brown sugar lumps remain. Whisk in the egg. Then, whisk in the vanilla. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough should be very soft but very thick. Cover the dough and let it chill for two hours or up to three days. *Chilling is mandatory.*
Take the dough out and allow it to soften at room temperature for ten minutes if you had been chilling it for more than two hours.
Line two baking sheets with parchment paper and set aside.
Pour the granulated sugar into a bowl. Take 2 tablespoons of dough and roll into a ball, then roll into the sugar. Place 3 inches apart on the baking sheets.
Bake for 8-9 minutes. Remove from the oven and gently press on the top of the cookie down with the back of a utensil or your finger.Place back into the oven for 2-4 more minutes. Take them out and allow them to cool completely.
